Cookie Recipe of the Day:Peek a Boo Pie

Peek-a-boo Pie — By Boo, Troop 5009
For Crust:
2 Tbs. melted butter
1 ½ Tbs. granulated sugar
11 crushed Thanks-a-lots
Pie tin

For Filling:
3 eggs, beaten
1 cup coconut
½ cup sugar
1Tbs. melted butter
¾ cup light corn syrup

Preheat oven to 375 degrees

Mix butter, sugar, and Thanks-a-lots. Press into bottom of pie tin. Set aside.

Beat eggs; add sugar and mix well. Add corn syrup and mix well. Add coconut and mix together. Pour into pie tin and drizzle melted butter over top. Bake in oven for 35 minutes.
