Starting off the Year Right! Week 1 Meal Plan

This week I am really going to start tracking what I am eating. I have come to realize that this really helps me to keep to my grocery and calorie budgets. Normally I do end up fudging a day or two and having leftovers or trying something that looked spectacular at the store, but then I just roll those meals over to next week.

We are trying to do the low carb thing, plus I have to stay under 10 grams of saturated fat a day so it can be a bit more complicated than the typical meal plan. Breakfast all week will be the standard omelet that my husband makes. It is made with Egg Beaters, a mix of fat free and lowfat cheese , mushrooms, tomatoes and salsa. Lunches this week will be a mix of soups that I have frozen and a Shrimp Quinoa salad that I am loving.

My plan for is to pull some things from the freezer and a have a few fresh meals as well. There are several recipes that I want to try out for future batch parties, so I really need to get to work on that. This week we are having:

Chicken with Poblano Cream Sauce over rice with grilled corn salad
Apple Chicken -over lettuce greens with steamed carrots - This is a new batch recipe that I want to try out.
California Thai Sirloin - this is another batch recipe that I can't wait to try. It has chopped peanut, mint and basil. YUM!
Pepper Lime Chicken with a side of turnip greens and baked artichokes.
Asian Style Pork Chops- with stir fired bok choy - this one is a family favorite!
Cabbage Sausage Soup - this one is a slow cooker dish that looks like it might be a good addition to batch party menus.
Black Bean Burgers - we are trying to go vegetarian at least one meal a week. Hopefully this recipe will satisfy my meat loving crew!


Thankfully I had the majority of these ingredients in my freezer and pantry. I will let you know how each day goes and post the recipes. Wish me luck!
